Trump Chicago Announces Reimagined Restaurant Concept
New Restaurant to be revealed later this year
Legacy Tasting Menu presented through April 28
CHICAGO – March 22, 2018 – Trump International Hotel & Tower® Chicago has announced the evolution of its Michelin two-star restaurant into a reimagined dining concept.
Scheduled to debut later this year, the downtown Chicago restaurant will feature a new name; an exciting, transformed design; a vivacious atmosphere; and a high-quality take on approachable dining.
“We pride ourselves on providing unparalleled service and delivering above what our guests want and expect,” said Trump Chicago General Manager Gabriel Constantin. “With our soon-to-be-launched, completely new restaurant, we will be able to offer our guests a compelling and invigorating dining experience they will be able to enjoy more often.”
Executive Chef Nick Dostal, who recently received the Jean Banchet Rising Chef of the Year Award, says, “People tell us they love the quality and thoughtfulness of our food but wish they could enjoy it more frequently. We listened, and the time is right for this evolution. Without compromising our dedication to guest dining and an unparalleled level of service, we are excited to demonstrate our team’s capabilities in a new era of more approachable dining.”
The restaurant, with a name yet to be revealed, will feature views of downtown Chicago and an a la carte menu of contemporary American cuisine with influences drawn from European and Asian cuisine.
Menu items will be created with the superb culinary technique that lives in Chef Dostal’s DNA. Including a range of dishes from small plates and starters to large, shareable entrees, items may include:
- Wagyu Beef Tartar with waffle cut fries, watercress, black garlic
- Tagliatelle with egg yolk and ricotta
- Whole Fried Branzino with scallion, ginger and sweet soy
- Pork Loin with butter roasted apples, potato pancake and mustard jus
- Cheeseburger with gruyere and caramelized onion
Both the food and cocktail menus will incorporate house-grown ingredients from the culinary team’s 16th floor terrace garden, which will expand its footprint even further this spring.
The inclusive, contemporary space will include a large dining room bar – a focal point for socializing and enjoying both classic and innovative cocktail creations. Dynamic seating options throughout the 100-seat dining room will offer high tops, tables and banquettes. The floors, furnishings and lighting will undergo a complete redesign, save the magnificent views overlooking the iconic skyline, Chicago River and Lake Michigan.
Adding to the breadth of the team’s culinary domain, the Chicago restaurant and bar will extend to the stunning 16th floor terrace, lending a 200-seat al fresco dining component during Chicago’s celebrated, warm weather months.
Sixteen’s final dinner service is Saturday, April 28 and the restaurant’s final lunch service falls on Sunday, April 29. From March 28-April 28, the team will present a Legacy Tasting Menu showcasing signature dishes from Sixteen’s lauded chefs over the years. The 16-course menu is available for $225 per person, with wine pairings available by Sommelier Parag Lalit. Reservations are highly recommended and can be made by calling 312.588.8030 or visiting OpenTable.
New concept build-out begins May 1. The restaurant will serve breakfast, lunch, dinner and an a la carte weekend brunch. The 16th floor terrace will open for service this May with a transitional menu until the new concept is unveiled.
“We have all pushed for excellence since we opened 10 years ago,” said Restaurant Director Adam Stark. “We are humbled by what we, and those who came before us, have created and the support we have received,” he says. “We are energized by the next chapter and look forward to creating a new home for our team and our guests.”
